Los Pilares Wines is a minimalist winery producing natural wines from San Diego County grapes, using extreme minimal intervention with no added yeast, acids, enzymes, tannins, oak, sulfur dioxide, or any additives—just fresh grapes. They craft experimental sparklers like Sparkling Muscat and BPN Sparkling Red from young Cabernet Sauvignon, alongside Grenache Rosé and a 50/50 Grenache/Carignane blend. Their approach avoids filtering, fining, or racking except for blending, inspired by pet-nats like LaDona.

Sparkling Muscat
Slightly effervescent with small bubbles. Honey, ginger, and flowers in the nose. Dry with a refreshingly bitter bite from the skin contact. Good for breakfast, lunch, and dinner.
